Penitentes, or nieves penitents (Spanish for penitent-shaped snows) are snow formations found at very high altitudes. They take the form of elongated, thin blades of hardened snow or ice, closely spaced and pointing toward the sun. They can reach a height of as much as 20 feet.

The name comes from a resemblance of a field of penitentes to a crowd of kneeling people doing penence.

Let's talk about one of our most essential resources - water.

40%

the percentage by which the demand for water outstrips available supply.

80%

the percentage of wastewater (such as that from agriculture and industrial processes) that goes untreated - and can go on to threaten us and the environment.

the number of people facing water scarcity.

This is a global issue that relies a lot on the people that we vote into power (and other powerful people) to be making educated decisions on behalf of us all. (And yes, we are saying VOTE.)

But we all want to do our own little bit, right? So here are some tips from conservation.org on ways to positively impact the global water problem.

Cut out some of the long soaks
A 5-min shower uses 10-25 gallons of water compared to up to 70 gallons used to fill a bath.

Repurpose water
When running the shower and waiting for it to heat up, capture the cold water in a bucket and use it for something else e.g. flushing the toilet.

Avoid over-laundering
We all love being squeaky clean, but can you get an extra day out of that top?

Make Something

For our final week it's just something fairly simple, and this will also mean if you missed Starbucks Pumpkin Spice season then you haven't totally missed out!

Homemade Pumpkin Spice Latte

Original recipe by thefoodellers.com
Difficulty: Easy
Time to make: 25 minutes
Servings: 4

You need:
2 cinnamon sticks
600g white sugar
500ml cold water
1/4 tsp of ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
4 tbsp pumpkin flesh / puree
600ml milk of choice
300ml coffee of choice
Whipped cream (optional)

To prepare the syrup:
1. Mix the sugar and water and bring to a low boil.
2. When the sugar has melted, add the cinnamon sticks, spices, and pumpkin flesh / puree.
3. Continue to mix on a low heat for about 5 minutes.
4. Remove from the heat and pour into a sealed jar.
5. Allow to cool, and refrigerate - or use straight away.

Now onto the main event:
1. Heat the milk almost to boiling point.
2. Add 2 tablespoons of your pumpkin syrup to a large mug.
3. Add your hot coffee along with the milk, and blend with a hand mixer until frothy.
4. Add any additional extras, e.g. whipped cream, and enjoy!

Simmer Down

For the final stove top recipe, here is something a little festive to get you excited for the coming season!

This week: Winter Wreath

You'll need:
A large saucepan filled with water
Juniper Berries
Thyme
Rosemary

How to:
1. Bring your saucepan of water to the boil.
2. Add all ingredients.
3. Allow to boil for about 5 minutes, and then turn down the heat so the pan simmers.
4. Top up the water regularly so that the pan is always at least half filled.
5. Enjoy!

REMEMBER to turn off the heat at night and to keep a close eye on the water levels!
