Earth Overshoot Day

Earth's Overshoot day for 2020 was August 22nd.

'This is a symbolic date on which humanity's assumption for the year outstrips the Earth's capacity to regenerate those resources that year. The date is getting earlier and earlier each year; in 2019, this date was July 29th. In 1999, it was September 29th.' (Source: Wired)

So interestingly, the COVID pandemic actually caused our ecological footprint to contract in 2020 - but this contraction is not sustainable and if things continue as normal, we can expect to see the date move earlier in the year in the future.

Make Something

This weeks make might actually be my favourite of the entire Sundays with Dixi season, pack! And those are big words, because we've already had some good ones. But this make is so quick and easy, that you'll want to make them every single day.

Vegan Cinnamon Sugar Doughnuts

Difficulty: Easy
Time to make: About 20-30 minutes

You need:
1 cup Plain Flour
1/2 cup Granulated Sugar
1 tsp baking powder
1/4 tsp Salt
1/2 tsp Ground Cinnamon
1/2 cup + 2 tbsp Soy Milk
1 tbsp Applesauce
1 tbsp Melted Vegan Butter / Margarine
1 tsp Vanilla Extract
A doughnut pan or muffin tin

How to:
1. Preheat your oven to 180℃ / 350℉. Spray the doughnut pan / muffin tray with non-stick spray.
2. Mix the flour, sugar, baking powder, salt, and cinnamon into a large bowl.
3. Add the applesauce, melted vegan butter, and vanilla to the dry ingredients. Mix well, until a cake batter consistency is reached.
4. Spoon the batter into your pan or tray. Or you can fill a large ziplock bag with the batter and cut a hole in the corner, and pipe into the pan.
5. Bake in the oven for 9-10 minutes or until the doughnuts are golden brown.
6. Allow to cool before transferring to a wire rack.

Now the topping!
7. Stir the cinnamon and sugar into a bowl.
8. Dip each doughnnut into the melted butter one by one, using tongs. Dip into the cinnamon + sugar mix.
9. Enjoy warm with a hot cuppa or coffee! DELICIOUS.

This is how mine turned out! I was actually pretty proud for my first attempt at baked doughnuts!

For next week you'll need:
Sweet potato
Oregano
Onion powder
Garlic powder
Cumin
Paprika
Salt
Pepper 

Simmer Down

It doesn't get more Autumn smelling than this weeks stove top recipe! Have you come up with your own unique blend yet?

This week: Pumpkin Spice Apple

You'll need:
A large saucepan filled with water
Apple cider
Pumpkin Spice Seasoning (refer back to Week 1 for how to make this!)
Cinnamon Sticks
Ground Nutmeg
Vanilla extract
Cloves

How to:
1. Bring your saucepan of water to the boil.
2. Add all ingredients.
3. Allow to boil for about 5 minutes, and then turn down the heat so the pan simmers.
4. Top up the water regularly so that the pan is always at least half filled.
5. Enjoy!

REMEMBER to turn off the heat at night and to keep a close eye on the water levels!
